Fats, oils and grease. They go down warm, cool in the pipe and harden, and food scraps stick to them. Scraping plates into the trash, keeping strainers in the sinks and keeping the grease trap maintained prevent most of it.
How often should a grease trap be cleaned?
It depends on the size of the trap and how much grease the kitchen produces. Your local sewer utility may set rules for how often it must be done, so check with them and keep records.
